Recently, I sat down with founder Ian Ibbotson, a longtime friend and former hockey teammate, to discuss his journey from Alberta to the heart of Vancouver Island’s craft scene.

From Alberta to Vancouver Island – Finding Purpose Through Hospitality & Construction

Ian’s story began in Drayton Valley, just outside of Edmonton, Alberta, and continued with formative years in Invermere. With a background in hospitality and various labor jobs, he eventually earned a diploma in nutrition in Calgary. A co-op stint brought him to Victoria, BC where he settled and worked in healthcare kitchens before finding his entrepreneurial streak. After years in construction and renovation, the aches and pains prompted a search for something new—leading to the world of sour beer.

The Spark: Sour Beers and the Birth of Ile Sauvage

At a dinner party, Ian’s first taste of Belgian sour beer, a Fou’Foune by Brasserie Cantillon opened his eyes to flavors that weren’t represented locally. This curiosity led to homebrewing, connections with a friend in South Korea, and eventually the decision to launch Ile Sauvage with business partner Stephane Turcotte. Together, they faced skepticism but saw opportunity in unique, wild-fermented and sour beers—a niche if ever there was one.

Navigating the Ups and Downs of Brewery Ownership

The brewery enjoyed strong demand during the pandemic, but recent years have required agility and cost-cutting as the market for breweries has become more challenging. Ian’s advice? Watch every subscription and expense—success is as much about financial discipline as brewing creativity.

Community-Focused, Family-Centric

For Ian, family and sports play a huge role in life on the island. From coaching hockey to supporting his sons’ lacrosse dreams, the brewery’s inclusive vibe reflects this spirit. While the tap room is a social meeting place it welcomes families and TV (for game days only, it’s not always on), Ile Sauvage also partners with Banger Burger Club for kids’ meals. The brewery’s real goal is fostering conversation and connection—not just product sales.

Business With Local Roots & Creative Collaborations

île Sauvage shines for collaborations with local restaurants, farms, and businesses—whether it’s brewing with locally processed corn for a Mexican lager or crafting jasmine-infused beer with a Chinatown dim sum institution.
